Fritas de Lesbia Recipe

Working in a language school, we are fortunate to work with people of all backgrounds, cultures and religions. Here is a family recipe from one of our Honduran teachers. 

Fritas de Lesbia Recipe

Ingredients

  1. 1 1/2 cups of all-purpose flour
  2. 1 heaping tsp of baking powder
  3. 3 tbsp sugar
  4. Pinch of Salt
  5. 1 heaping tbsp shortening
  6. 1 egg
  7. 7 tbsp of cold whole milk

 

 Directions

  1. In a large bowl, mix your dry ingredients. Add your shortening and egg.
  2. Mix thoroughly using a fork to mash until the ingredients are combined.
  3. Add your cold milk and continue mixing. Feel free to add a tad more if you feel like your dough isn't coming together.
  4. Once your mixture has become a dough, knead it on a flourless surface for a few minutes. Once you feel the dough is smooth and pliable, make 2 inch dough balls and place them on a plate. At this time, cover them with plastic wrap or a tight cover to set for a few hours or overnight in the fridge.
  5. Once you are ready to fry your fritas, take out your dough balls. Allow them to come to room temperature (about an hour).
  6. On a plastic plate or a piece of parchment, use your fingers to flatten out your frita into a large circle roughly 6-7 inches wide. The dough should be flat but not too thin.
  7. Using a kitchen knife, make three slits in the middle of the frita with an inch between each slit.
  8. Fry these up one by one in a good quality vegetable oil. Your fritas only need a few minutes on each side before they become gold and bubbly. Be careful when you flip.
  9. Serve with a delicious salted butter and miel de abeja!
